Which Windows would go best for my build?

I currently operate and own Windows 7 x64 Ultimate Build 7600 and I have been wondering if Windows 8 actually would perform faster for my build than Windows 7, I am pretty sure all my components won't have a problem with Windows 8, but is what are the Disadvantages and Advantages of 8 and 7, and which is recommended for my build, build specs are in my sign by the way. I have seen Windows 8 and it looks like its a tablet OS for computers, I don't really prefer Win8 for that reason, but if it will make my comp faster, I can learn to like it.

I think you should stick with Windows 7, as its a much better OS. Windows 8 was designed for touch screens, so unless you have a tablet or a touch screen moniter, it's pretty useless.

it does perform a bit faster and supports desktop and laptop systems (RT for tablets).

windows 8 changed to the "modern" UI interface with live tiles. this is less appealing with a mouse than a touchscreen, but that's why microsoft included the "desktop" app. it looks very similar to the windows 7 desktop and there are third party programs to add a start menu if you don't like the UI. Overall, windows 8 is an upgrade, not a downgrade

not at all, it's pretty easy to make it look more like windows 7 and still keep the performance enhancements.

also, most windows tablets run winRT

i see you've already got a SSD, so i assume your current setup boots windows 7 in something like 30 seconds. windows 8 does have some performance improvements, but it'd certainly not knock your boot time (or opening applications/games) in half - maybe wouldn't even be a perceptible difference.
to be clear, i haven't installed both windows 7 and 8 on the same machine to compare performance between the two (maybe someone who has could pipe in), but i have tried windows 8 on a my 'spare' machine and a VM and found performance to be similar to what i expected of windows 7 - it didn't blow me away in other words.

here's the real questions you should as yourself: even if windows 8 does everything 10% faster than windows 7 (boots up in 27 seconds instead of 30) is it worth sacrificing the start button for such an inconsequential gain in performance?

No, Windows 8 will not make your computer faster at all. Use Windows 7 Ultimate that has the top notch features such as Disk Encryption.
