I have a ZOTAC gtx 670 AMP! edition GPU and when im playing high intensity games like Assassins Creed 3 and Sleeping Dogs on all max settings and textures, MSI Afterburner says that my card never uses more than about 1GB of ram when my card has 2gb, even when its >90% GPU usage. Why is that?

If it is going at almost max capacity to run a game and not going over 1GB, when will it ever need/use more than that

The VRAM stores textures and the like, it isn't directly related to usage. Try playing something like BF3 or Crysis 3, that will use more to put your mind at rest.

Also if your at a sub 1080p resolution I wouldn't expect it to use more than that.

Yea there's very few games, even when played at max settings (at 1080p) that will use more than 1gb of vram. Skyrim is probably the biggest culprit. Metro 2033 and Far Cry 3 probably do. BF3/Crysis 3 might.

If you try playing at 1440/1600p at max settings on somewhat less graphically intense games (maybe something like SCII? I dunno), you also might use more than 1gb vram simply because of the increased resolution.

adampcpower: You seem to be confusing processor usage and RAM usage. 90% in Afterburner means that it almost fully taxes the GPU (graphics card processor), it doesn't mean it needs to use more RAM... If it needed to don't worry it would use it because more is available.

Not a lot of games will require more than 1 GB. You didn't say what's your resolution, but most people play in 1920 x 1080 and that resolution rarely requires more than 1 GB. If you were playing on multiple monitors or had a monitor with higher resolution like 2560 x 1440 or 2560 x 1600 then you would see your card using more RAM.

If you reach decent FPS and your games are not sluggish, don't worry everything is fine.
