i have recently bought a new computer and i want to move all my data from my old HDD to my new HDD if i cloned it i am afraid that it would clone the old os which wouldn't work with the new pc.

If i just connected the old HDD and moved all my games and applications onto the new HDD would the games and applications work

(Some of my games are on steam and origin so if i downloaded these apps would they be registered with my accounts not my computer?)

Splendid
Steam games - just download and reinstall.
For other programs and games you will need to reinstall them. Some MAY transfer over if you get lucky, but usually there are files installed in the windows directory that you would have to hunt down.
You can put the old drive in the new computer, just make sure that it is not in the selection as one of the boot drives. You can then access it like any other drive.
