raid 0 but not in raid? how is this possible?!

So heres the run down (bear with me its a bit long). I bought a Samsung 840 Pro 512gb a while back. Installed it, within 2 weeks it started going bad and causing random windows error messages. At the time I was running the 840 pro in non raid and then 2x1Tb caviar black's in raid 0. Once I got the new 840 in I proceeded with re-installing windows 7 and as windows 7 is nit picky about installing in RAID mode I set my motherboard back to AHCI mode, and unplugged my 2 spinners. Just now got everything installed and went to try to put my raid 0 back together, switched the motherboard back to RAID, re-plugged in my spinners, and proceeded to boot, when windows tried to boot it gave a blue screen and shut down. So i switched back to AHCI mode and it booted windows like normal, to my surprise under My Computer there is my RAID 0 setup, WITH all my files that were on it before and none of them are corrupted!?! How is it possible for the RAID array to show up when my motherboard is not even in RAID mode?
