First time gaming PC build

Recently come into a bit of cash, looking to build my own PC for the first time and while I've done some research, I'm still looking to avoid classic newbie errors. This is what I've got so far:

Approximate Purchase Date: ASAP

Budget Range: Up to £1,000 total, but willing to go a little over if cost effective

System Usage from Most to Least Important: Gaming, work (requiring lots of spreadsheets and a couple of databases programs open at the same time), general internet and multimedia

Are you buying a monitor: No - but am planning on eventually getting a second monitor

Do you need to buy OS: Yes

Preferred Website(s) for Parts: Aria or Overclockers - only because they've already been recommended to me, open to any other suppliers

Location: South East UK

Parts Preferences: Intel CPU and nvidia GPU

Overclocking: Maybe - if cost effective

SLI or Crossfire: Maybe - although research suggests it's not really value for money

Your Monitor Resolution: 1680x1050

Additional Comments: Needs to run Windows, 7 or 8, but wouldn't mind also being able to boot Ubuntu. Would like to run Skyrim at top settings too. Have two 500GB Hitachi HDP725050GLA360 hard drives that work fine and I would also like to incorporate into the build as additional storage

And Most Importantly, Why Are You Upgrading: Most of my current desktop is 5 years old and not running so great :(

Unfortunately, that's as far as I can get. I'm aware that I might need some of the following things:

Case: I know it needs to be big enough to keep everything in, but that's about it

PSU: Would 600W be enough? I'm just not sure.

Cooling: How much do I need? Fans or water?

Sound card: A lot of people have said I needn't bother with one, is this true?

I'm open to any and all advice or suggestions. Thanks.

Solution
The case is usually a personal choice as to what you might want to look at , the psu should be 600w or higher if your going to consider SLI , the case you get will come with fans and you'll have to see how many and if you need to add any, three or four will be good. The motherboard ill come with intergrated sound and it's usually 8 channel and HD.
