ATI 6870 crossfire question.

Hello, I've done as much reading about crossfire as possible but now I still have a few questions left unanswered.
I'm going to buy myself a 1080p beamer soon ontop of the 2 24" screens I'm using. My current GPU is the ATI 6870 with 1GB VRAM I believe.
-I know that I can't run all 3 of them at the same time on a single 6870 so could I run all 3 of them at the same time if I got a second card in xfire?
-Will running xfire improve my streaming quality? Right now the only thing limiting my live stream quality is my single GPU so will having 2 of them improve it (The games I play are SC2 and soon will include CoD:MW3)?
-Due to me only having 1 GB of VRAM and running 3 monitors on full HD,wouldn't it be better if I went for the other option and bought a 7970 with 3 GB instead? But if I went for the single GPU option I would once again have the issue of only being able to use 2 screens at the same time.

What is your take on this? Any advice is welcome.

Yes of course.
CPU: i7 950
Mobo: asus p6x58D-e (I can run Xfire at 2x 8 speed)
6 GB tripple channel RAM
One thing I would like to add tough is that the 6870 card would cost me 150 euro whereas getting a 7970 would be around 400.
My main concern is that when I have 3 screens running 1GB of VRAM won't be enough to support that + a live stream.

I geuss that I'm open to it. Although it's a much more expensive thing to do for me. As I said before it's 150 euro vs 400 and I know that the crossfire runs on my setup as I've tried it before with a friends card.
But I would like 2 of the 3 questions answered tough. 1) Will the 1GB VRAM cause issues while having 3 screens? 2) Can I hook up all 3 of them in the following order: first card 1 HDMI + DVI-D and second card 1 HDMI.

The projector will be used to view movies etc. but I'll also be live streaming games using xsplit.
And what about 2?
