Would I be better off getting 4gb sticks or 8gb sticks for this motherboard? (gaming pc)

I have heard that for a dual channel mobo that multiple smaller ram is better than larger single ram, also what is the best speed of ram? pretty much just as fast as the mobo handles or what?
Lastly what is a good brand of ram? I have looked at corsair and have seen good reviews, but I see crucial ballistix has come out with some new cooling/monitoring system, so are those better? I have heard from some that the amount of ram you have has a big effect on games and I have heard from some that you need no more than 8gb of ram, so I'm just not sure what to think, because I have never built a computer before, but I really want to do it, and do it right with the right parts.
