Your "unstable" reference likely came from someone trying to overclock their CPU, in which case, any CPU can be unstable when overclocked if everything is not dialed in properly...(voltage, cooling, etc.)
So, in this regard, AMD and Intel CPUs can both be unstable when overclocked, and basically that means they should adjust their overclock a little, either by voltage or BIOS settings, or other factors.
