Ideal GPU(s) for Modded Skyrim w/ triple monitors?

First, my cpu is i5-3570k oc @ 4.2ghz.

I was planning on a gtx 690, but I'm hearing Skyrim mods can eat up VRAM and the 4gb on the 690 might not suffice for 5760x1080 res. I'm planning on HD texture packs and ENB.

Disregarding other hardware requirements (PSU, MB - I'll find best fit), what would be a good choice?

I've been swaying between a single gtx 690 (£700-800) vs 670 4gb SLI (£350 each). It is a £300 jump to 680 4gb SLI (£450-500 each) vs the last two options (at least in UK).

I really don't want to spend more than a £800 on GPUs, as I still have to buy my two missing monitors. Appreciate any insight, esp. from somebody who is running modded Skyrim at these resses.

Well go 2 SLI's at 4GB will still only give your 4GB. VRAM doesn't double in SLI, each card just has access to whatever card has the lowest amount of VRAM. Titan has 6GB or 7990's come in 6GB as well.

Great. I didn't know that :/ 

So speaking on performance/vram balance. You think a jump to titan is worth it? I've seen 7970 6gb versions for half the price, which I could eventually SLI, though I'm trying to avoid an SLI setup.

Though I understand future-proofing is a lame approach to hardware, I do want room to improve by adding a second or third card. In this regard, do you think 4gb will suffice for the next few years or would it worth jumping for 6gb?
