So I have 8GB of Kingston HyperX Blu 1333 RAM (2x4GB)...
I want to upgrade to 16GB but I'm wondering if it is better to sell my RAM and get 4x4GB kit or just get another kit of the same RAM I have?

Um IDK I think it's quad I have the ASUS MAXIMUS IV GENE-Z/Gen3 if that helps.
I think max is 32GB or 64GB there are 4 slots...

Gaming, school, multimedia, programming, VM (sometimes for Ubuntu)...
So it's not worth spending the extra money for 16GBs?

Hmmmm, in that guys do a test to see. Use Resource monitor while you do different things and see what your RAM usage is like. If it nears 8GB, then its worth it, if it does not, then its not worth it.

Alright thanks but is it better to do 4cx4GB or (2) 2x4GB of the same RAM...

Does not really matter that much, its BETTER to keep it 4x4GB, but not really all that much, just keep the specs close.
