Unless you're running tons of VMs or doing lots of multimedia authoring you don't need an i7 for that usage. My four year old Core 2 Duo laptop can run streaming applications fine. It doesn't take a lot of horsepower for that.

You definently do need a lot of horse power to stream 1080p on streaming services such as twitch. Just a little research on google will tell you that. Shoryuken, that build looks great!
