What is good enough? 1500-1800$ build (I keep overcomplicating things)

I need advice. Started lurking around this parts of the interwebs about 5 months ago. I've always wanted to build a gaming rig, but every time I think about it, I overcomplicate things.

(Incoming story) I'm now gaming on a rMBP through bootcamp. I always use more than one screen as I fancy watching a stream or a movie while gaming. And as you can probably imagine, the performance I get aren't nearly reaching what I'm hoping for. Furthermore, I like to stream once in a while and my current setup wont let me do any of that sweet sweet data dispatching.

Every time I look into building a computer I get carried away. Wanting to build a water-cooled machine with 3 way sli and 3 monitors... (Previous build Idea came up to 3900$ with to much modding and tweaking (Keep in mind that I've never done this before)). And I really don't need such a beast of a machine. So I'm asking for your help. I want to build a good rig, I want to keep to the required components (Not to add to much fluff)...

Approximate Purchase Date: e.g.: This summer, considering my options and your suggestions...

Budget Range: 1500 - 1800 $ (Living in Japan, so... the equivalent in Yen (180 000)

System Usage : Gaming (Mostly Sc2 with Occasional steam library games), Streaming, Media box of enlightenment...

Are you buying a monitor: No, I have 2 x 23 inch 1080p monitors.

Do you need to buy OS: Yes, windows 8???

Preferred Website(s) for Parts: Amazon.jp (No really matter, Id rather have a good build and look for the prices on my own afterwards)

Location: Japan

Parts Preferences: I don't know why but I've always gone for Nvidia and Intel (Should I rethink my priorities?)

Overclocking: Yes

SLI or Crossfire: Maybe (Should I?)

Your Monitor Resolution: 2x 23 inches (1920x1080)

Additional Comments: I really like the Corsair Graphite 600t case... And a thunderbolt capable Motherboard would be great (As my steam game library is on a thunderbolt drive and my Itune library / picture library are on thunderbolt drives)

Why Are You Upgrading: I want to be able to do all what I couldn't do on my previous machine and I'm sick of gaming performance limitations caused by hardware.

Well a lot of our reccomendations will change with pricing and with new releases in hardware

For CPU an 3570k

for mb, the gigabyte z77x up4 TB or the asus p8z77 v pro Thunderbolt whichever is cheaper

For GPU get 2x660/660ti in SLI or a 670/680, will look into Jap pricing to see

PSU, generally an 550W for single card or 750W for dual cards
Look for corsair/xfx/seasonic/antec/ocz units with a single 12v rail

For storage, since your games are on an external, get an 128GB sdd (samsung 840 pro, ocz vector)

Cooler would be the 212 EVO for bduget. Mid range would be the TPC 812 or 612PWM. High end is the noctua HH-D14

For ram just get any 1600mhz/1866mhz 2x4gb kit whichever is cheapest. Aim for 1.5v kits and ones without large heatsinks [they will interfere with your cooler]. (crucial, kingston, g-skill, giel, corsair, mushkin)
