That depends entirely on how much you can get for the 7850
7850 CF is deffinately faster than a 7970 not by a terrible amount, if you can get a good price I say move to one single card. If not get another 7850 as they are getting mighty cheap now as low as 159.
What are you playing right now? how are the frame rates? maybe wait and see, it couldn't hurt those cards are only going to get cheaper with age
