One of the rooms in my home uses a Powerline Adapter to connect to my internet. As I understand it, this uses the electrical wiring in my house to carry the signal like a traditional wired connection. I imagine that this electrical wiring is not nearly as efficient as cat5 cable would be.

Am I safe in assuming that the cable I run from this powerline adapter to my computer doesn't really matter? There would be no difference between using cat 5 or 5e or 6 at that point right? Whatever quality signal I could get from the computer to the adapter would mean nothing once it hits the electrical wiring in my house I assume.

Yes but again, the device doesn't only filter the signal to your cable, it also change the modulation and frequencies and amplifies the signal.

In other words, you can consider that the cable lenght on the RJ45 side begins at the device with a normal electrical level.
So use standard cabling...
