CPU & GPU upgrade (gaming focused)

Hallo!

I'd like to update my Athlon 64 x2 5000+ and Ati HD3850 to something faster, i mainly game and browse the web with my pc with the occasional video encoding for youtube use.

I was condidering going Athlon x4 640 + Ati 7850, but i've seen some tests showing better results with x3 cpus!

At the moment the system has 4 Gbs of DDR2 ram, i will be running windows 7 (currently on XP 32 with large address aware), my psu is 500w.

I mainly use 1360x768 (32" TV), i'd like to use at least 4xAA though with this new setup.
I can't seem to find any new Phenom IIs that can fit my motherboard (brand new at least) here in Italy, i can get the
Athlon x4 640 (3.1 ghz) for 69€
Athlon X3 455 (3.3 ghz) for 65€
Phenom II x2 555 BE (3.2 ghz) for 100€ stretching my budget somewhat.

I have tried a Phenom 550 be on my system, unlocked a third core and up to 3.4 ghz, only to use 30-35% capacity of the CPU (being GPU bottlenecked).

Right now my GPU is bottlenecking my system (my x2 doesn't seem to go above 65-70% usage in any game), so i though maybe those new games are mainly GPU intensive, therefore most of my budget would go on the 7850. I thought at worst i can increase FSAA or filtering etc to get more eyecandy :)

I would be happy with 35-40 fps at that resolution.
