Did you mean 7850 1GB vs 7850 2GB? It really depends on your resolution and aa settings as to how much vram you need. I play at 2560x1440 and never use 2 GB.

The differences you see in benchmarks are due to the margin of error - it's the same chip clocked at the same speed. Same performance.
Go for 2GB VRAM, you'll be glad you did in a year.
