mSATA drives plug into mSATA ports. I haven't heard of a motherboard with 2 mSATA ports.

Verify that your computer has 2 mSATA ports or that it has a dual mSATA adapter before you buy 2 mSATA drives.
If it doesn't have it then you won't be able to create a RAID array.

Yes, if you create a RAID array the 2 drives will appear as 1 drive. If you don't create a RAID array then they will work individually.

You will have to read your motherboard user manual. It will have instructions on how to enter RAID BIOS and create your array.
