TL;DR
I tried to update BIOS and somehow messed something up.
On a hunch, I started up my PC without any HDD or anything plugged into the back of the PC and it finally got past the post screen and but went to a black screen advising BootMGR would load. I plugged my HDD back in (still no periphs) and it loaded Windows without any issues. I plugged my mouse, keyboard, etc back in, restarted and it got stock on the post screen again. I tried it without my keyboard, restarted and it loaded up on Windows again fine. I tried a spare keyboard I had and the PC works (worked) fine as if nothing had happened. I could hop into BIOS with no issue. Now, a day later, when I try to jump into BIOS, it kicks me directly into Windows. Not really sure what the heck is causing all this. Any input?
Edit: First keyboard was connected via PS2 and 2nd keyboard is via USB.
