Unless you do video encoding (not converting only) or deal with massive picture files or some other memory intensive task, there's no point in getting more than 8GB of RAM. Gaming requires no more than 8GB in a PC and is unlikely to benefit for many years (the PS4/XBOX720 have 8GB of shared memory which is great but still doesn't really raise the 8GB requirement for PC's likely).
It's likely that your motherboard will support up to 32GB (8GB per slot) so if you require 16GB you can still do that with only two slots (2x8GB). While this also leaves room for expansion, it's generally advisable to stick with the EXACT SAME RAM and use the optimal settings determined by the BIOS (via SPD).
Points:
1) Manually overclocking the CPU can overclock your RAM as well, so monitor that.
2) run MEMTEST any time you change any memory settings
My advice is to get 2x4GB of at least 1600MHz. More than 1600MHz can benefit in some circumstances but not many so go with:
1) best price
2) quality
