SBS 2011 with Premium Addon

I need to install a new server for my 9 users who currently keep their email and docs on their individual PC's and there is really no backup in place. I was looking at SBS 2011 standard because it has exchange built in. SBS standard would have been perfect were it not for the fact that I'm hoping to install a new accounts system which the supplier says needs terminal services (RDP). SBS standard doesn't support RDP. There is a premium addon which I would allow me to install a RDP server. This is where I get confused. The premium add on gives a license to run a second Windows Server on which you would install RDP.

From reading some forums people are talking about using hyper-v to virtualize the SBS and the second server license.

I have a few questions on this.

1) Why the need for this? Why not just enable RDP on the SBS
2) I have little experience of hyper-v. How hard/easy is it to master?
3) I'm looking at a dell server. Will it come with hyper-v installed and my SBS and second server license already installed?

Make your life a bit easier, call Dell and tell them what you need. A system engineer should be able to recommend a configuration.
