2 670s will be faster than a single 680. I would just get a single 670 and OC it. When I need the performance just add another one. A 680 is a couple percent faster than a 670, stock vs stock.

if you can afford the 680 get it.

if not, i suggest a 7970, cheaper than a 680 but similiar performance.

The 680 will only be ~5% faster than a 670, but it costs 25% more. It's not worth it.

That is your monitor setup and resolution? At just 1080p, a SINGLE 670 will max basically any game out there. My vote is buy one, and then buy another only if you aren't happy with the performance.

I just looked at your monitor - I have that same one, running off a single EVGA 670 FTW... there are about two games I can't max and get 60fps, and about six that I can't max at at least 120 fps.

Crysis 3 and Far Cry 3 - but I can't even tell a difference between maxxed settings and the ultra preset, so no worries there.

... You realize that the 680 can't max them out at 60fps either, right?

If you really want to spend money, the two 670s is a WAY better option.
