If you want something quiet, you need to aim for low power consumption and you don't want to be overclocking. I would avoid AMD CPU's for low power consumption. The Xeon E3-1230 v2 would be best for you, should beat the FX-8 in every way including power consumption.

EDIT: I'll just point out that although the Xeon would be more powerful than the FX-8, you can't overclock it. You won't want to overclock if you want something truly quiet though.
