Upgrading from GTX 560 to...?

Im looking to upgrade my computer because I'm noticing newer games are not getting good fps. I think the best bang for my buck would be to upgrade my graphics card, but I'm not sure which to get. I know Nvidia is releasing their 700 series next month, so I'll probably wait on that before purchasing anything, but should I look into getting one of the new cards (700 series) or hope for a price drop on the 600 series and go for one of those?

I have about $500 for total PC upgrades, but dont want to blow ALL of it on a GPU (I want to get a new power supply also). Also, would it be better to get one card or two, such as 2x 660 or 1x 680? Mostly use the computer for gaming.

Solution

Get a GTX 670 and a great air cooler for overclocking that i7.
Post up the parts in your current system.

And one card is better. The GTX 680 is only marginally better than a GTX 670 for a very hefty price. It's not worth it. If anything, get a GTX 670. It'll max out all games currently. And you don't have to fiddle and tweak with SLI.

Mobo - EVGA X58 SLI FTW3
CPU - I7-950: 3.06ghz
RAM - 16gb DDR3 1600mhz
GPU - 560 GTX
PS - Corsair 750w
OS - Windows 7 64bit

Let me know if you need to know something more specific.

*edit* The main drops in FPS happen because I record my games.

Yeah, Im a noob at overclocking though, so I was still doing some research on how to do that one properly. I have great cooling on it.
