I have this 600W PSU as of now.

but I recently just did a whole system revamp. (specs below)

I now have the Sapphire HD 7970 OC BE. It requires 2 8-pin pci adapters which the psu doesn't have. so as of now I am using the 6+2 pci and the 2x4-pin molex to 8-pin pci adapter to power the GPU. I have a slight over clock on top of what it comes with, but I am worried that the PSU isn't going to cut it. I also have my CPU overclocked.

Will it be fine or should I get this PSU instead, just to have some headroom for upgrades (maybe crossfire eventually) and have all the connectors I need out of the box?

AMD FX 8350 @ 4.8 GHz | Gigabyte 990FXA-UD3 | Sapphire HD 7970 OC BE @ 1050mhz/1500mhz | Intel 520 180gb SSD | 8gb RAM @ 1600 | Antec Kuhler H20 620 | Thermaltake 600W PSU

$120 seems a lot for a 850 watt Thermaltake unit

Top Tier (No. of connectors in parenthesis)
$143 Corsair HX (6 x 6+2 pin) http://www.newegg.com/Product/Product.aspx?Item=N82E16817139011
$135 XFX Pro (4 x 6+2 pin) http://www.newegg.com/Product/Product.aspx?Item=N82E16817207017
$120 NZXT Hale ( 2 x 6-Pin, 4 x 6+2-Pin) http://www.newegg.com/Product/Product.aspx?Item=N82E16817116016
$120 Seasonic MD12 (4 x 6+2 pin) http://www.newegg.com/Product/Product.aspx?Item=N82E16817151108

2nd Tier
$120 Corsair TX (4 x 6+2 pin) http://www.newegg.com/Product/Product.aspx?Item=N82E16817139022
$130 Antec HCG (4 x 6+2 pin) http://www.newegg.com/Product/Product.aspx?Item=N82E16817371050

And no, I don't like the Molex option

Thanks for the links, and yeah I was a little shaky about the molex. the reason for the thermaltake is that I can get it in a local store, and won't have to RMA if any issues occur. Its the same price in store, Is it really not worth the money? (It does have decent reviews...) If so what should I look for? I like the modular PSUs for a clean build, but PSUs are something that I really don't have much knowledge with.

That PSU should be fine.
Some other recommendations would be:

The MOLEX ->PCIExpress adapter is just fine but don't overclock your card while your using it!
I also used such adapters years ago when I upgraded an aging PC with an AGP-based HD3850 card.
That system is still working perfectly fine, but I didn't perform any O.C. on the card.
Go with modular PSUs - it's always better to be able to remove some unused cables and improve airflow+aesthetics inside the case.

You have two 12volt rails at 23 and 20 amps.. should be fine. i wouldn't think about crossfire though. You will need a better PSU. I run two 7950's in crossfire and use molex connectors for the second card. CPU is overclocked to 4.5ghz and GPU's at 1140. Haven't had any problems..
