I currently have i5 2500k in a p67 ATX board with a GTX470 and I am looking at downsizing to an ITX form factor. I am currently running four monitors; two on the 470 and two on a seperate GT210.

My question is if I were to buy a Z68 or Z77 (More likely) based ITX board could I utilize my i5's built in Intel 3000 graphics to run monitors 3 and 4 using the outputs from the motherboard?

No. You can use one or the other, not both.

I don't believe there's any motherboard that will let you run onboard video when there's a dedicated card plugged in.

That being said, you could buy a video card that has four outputs, such as a 7750 with a MST hub.
