Which Radeon 7000 series Graphics card will work best

I am planning to build a gaming PC/HTPC this summer after Intel releases Haswell. I am looking at max price somewhere around $500 for a graphics card. I plan to play games such as the Mass Effect and Crysis trilogies and use FSX. I will hook up the PC to a Sharp Quattron 3D LC-60LE835U 60 inch LED TV. I want to get both the smoothest image and highest frame rates possible (around 60 fps or above) at 1920 x 1080p on very high or ultra settings without overclocking. I also wish to avoid overkill. Currently AMD recommends the 7870, 7970, and the 7950. Which of these would work best or could you recommend a different choice?

With that large of a display at 1080p, you are going to want to use the highest settings as you say. Anything less will be less than desireable on a 60" display. So I would not settle for anything less than the HD 7970. However, AMD is having a little problem with stutter right now due to long frame times. http://www.anandtech.com/show/6857/amd-stuttering-issue
Nvidia also has this issue, but it is not as noticable. For that reason alone, you may want to consider looking into the comparable GTX 680:
