What kind of GPU do you recommend me to buy?

No budget - however, I want only one GPU running not SLI or anything like that.

I had until now 680 SLI so anything more powerful than that will be tough to get, however a Titan signature superclocked can top that? Or a 690 superclocked ? I was thinking of getting the 780 what do you think? I just saw an article of the 780 underpreforming the Titan that worries me...

If you want to upgrade, I suggest you look at some benchmarks and see if anything out there performs better than the 680 in the games you want to play. If it does, get it. If not, don't. Not really too much for us to tell you in this case.
 
There is not really anything right now that beats 2 GTX 680 in SLI, a GTX 690 is just 2 GTX 680 on one PCB clocked at lower frequencies which means lower performance.
Going Radeon 7990 is simply not a good idea due to the bad optimization from AMD. It performs worse than a GTX Titan only because of the drivers, if the drivers from AMD was up to par with Nvidia then it might be a good GPU to look at, however it is also just 2 Radeon 7970 in CF on a single PCB.

The GTX 780 will be a crippled GTX Titan according to the articles and specs that has been showing up here on Tomshardware.

I am running at resolution 2560x1440 forgot to mention that, what worries me is that I might just buy 690 GTX and be fine with that, the only single GPU that will top it will be probably 790 GTX right?

If not please tell me what single GPU is best to buy as I heard Titan is not the answer for my kind of resolution.
 


790 will neither be a single-GPU it's still 2 x 780 GPUs on a single PCB.
