Is USB3 a good idea for RAID0, should I go eSATA

Hi, I have a couple of Seagate Barracuda 7200 drives in a RAID0 Array. I am getting a throughput of 180MB/s (using he Blackmagic Speed Test.) I have been told by someone who seems to have a lot of experience with hardware on an Adobe Premiere Pro forum (I am using the array for video editing) that I should be getting faster speeds and it is the USB3 that is the bottleneck. So I was thinking of getting a new eSATA enclosure but before I spend the money wanted to ask here.

What kind of speed should I expect from RAID0 with these drives?

Is USB3 likely to be the bottleneck, should I go to eSATA? What are the real-world speeds for these interfaces?

Lastly what RAID0 eSATA enclosure should I get, or are they generalisably all the same?

I should mention I am on a bit of a budget, I know the general advise would be to get a top of the range RAID0 array but its a lot of money for me.
