I am building my first pc and settled on this psu due to its high rating.
I was wondering if later on, if I wanted to, I could use it to power two mid-high end gpu's and perhaps some light oc on my cpu (which will be the i5 3570k).

thank you.

in one review I read I saw it had an actual power capacity of almost 800w...

would I be better served getting a 750w psu?

That PSU is EXCELENT! As you can see above it can safely deliver just under 800W reliably. You could xfire or SLI easily pretty much any single GPU.
