EVGA X79 SLI Motherboard LGA 2011 RAM support question

This motherboard says that Quad Channel memory is supported. With that being said, is it still possible to use the DIMM slots in other channel configurations? I would like to try and make a build using this motherboard but in dual channel to fit within the budget. Thanks.

    From the manual:
    Your new motherboard has four 240-pin slots for DDR3 memory. These slots
    support 1GB, 2GB, 4GB and 8GB DDR3 DIMMs. There must be at least one
    memory slot populated to ensure normal operation.
    The Intel X79 chipset supports quad channel memory; you can choose any slots to insert the DIMMs.
