Currently have Kingston Hyper X 6gb (2gb x 3) DDR3/1600MHz triple channel memory modules. Play games and multi task alot. what the best memory upgrade I could make?

i7-960 3.2gb, Radeon 5870, 950watts ps

Because the MB can support the RAM is a 4GB for each memory slot, so you either can get the other 3x 2GB set, but sometime you will have problem for mixing the RAM. As long as you don't use for the photo/video editing software, even you say the multi task, either 8GB or 16GB that will be more than enough. For your case you are better to get the new set RAM 3x 4GB (1600Mhz cl9 1.5v) if you want. For the intel system the RAM from 1333Mhz to 2133 MHz will have almost same performances, the review will tell you the info even it is for the sandy bridge system.
