I had Ubuntu on my media server and decided to go back to Windows. I reinstalled Windows over my smaller hdd that Ubuntu was on, which is fine but I have another 2 tb hdd filled with media that Windows can't read. Is there any way to make windows read and wright from it? I don't know what to do. What are my options. Please help!

If it was ext3 then there are plenty of free third party drivers that will do the trick. If it's ext4 or something else then there is no reliable way other than copying the data off the drive, repartitioning, reformatting, and copying data back.

Word of advice, if you plan to share data between OS's use a platform agnostic format or the Windows format. These are easier to deal with when moving data from one OS to another.

So I made a Ubuntu boot disk but now when I try to transfer my files it says I'm not the owner and the files are locked. Anyway around this? Never mind gksu nautilus ftw!
