Can you RAID 3 harddrives together and 2 ssd

Im building my computer build for gaming and i have 3 harddrives and 2 ssd's i was wondering if i can raid 0 the hdd's for 1 whole harddrive then i can raid 0 the 2 ssd'd as my boot drive

You can, as long as you have enough ports on your raid controller.

Stay away from this until you know at least, what a raid controller is! A raid0 on SSDs is useless as it is on data HDDs anyway. To avoid frustration, you should try to get your first build to boot with a plain setup first.
