You have a laptop with tap-to-click enabled on the touchpad. Your thumbs/wrists are hitting the touchpad as you type and it's registering as a click, which moves the cursor to wherever the mouse pointer is.
Some touchpad software can decrease the sensitivity or has accidental touch detection. I personally just disable tap-to-click on mine.
