Which of these 7950's are better for gaming and why? I need something that will not get too hot but will play all gaming in ultra

Get a sapphire raedon hd7950 Vapor x edition because the boost and the vapor x edition are same only just the vapor x edition has a much far better cooling than other gpu's.
Go for the Vapor x edition.
 
Dont know, just the way they name the components. I browse it often enough that I just somehow picked up on it.

All but the Gigabyte model are reference design (or basically reference in the case of the IceQ), which runs louder and hotter than a custom design like the Gigabyte Windforce cooler.
I suggest you go with the Gigabyte model.
