Advice on +2k Build

I'm looking to see if anyone would have any helpful advice on a build that I've scrounged up. It's pricey as you can tell, and would like any advice in helping with stability/reliability with how much money I'm going to fork over for parts.

Build is as follows:

CPU: Intel Core i7-3770K 3.5GHz Quad-Core
CPU: Cooler Phanteks PH-TC14PE_BL 78.1 CFM
Motherboard: Asus Maximus V Formula/ThunderFX EATX LGA1155
Memory: Corsair Dominator Platinum 16GB (2 x 8GB) DDR3-1866
Storage: Crucial M4 256GB 2.5" SSD
Storage: Western Digital VelociRaptor 1TB 3.5" 10000RPM
Video Card: Sapphire Radeon HD 7970 GHz Edition 3GB
Video Card: Sapphire Radeon HD 7970 GHz Edition 3GB
Case: Cooler Master HAF X Blue ATX Full Tower
Power Supply: Kingwin 1000W ATX12V / EPS12V
Optical Drive: Asus DRW-24B1ST/BLK/B/AS DVD/CD Writer
OS: Microsoft Windows 7 Professional SP1 (OEM) (64-bit)

first of all, have you gamed on 3 panels before and performed better by doing so. because if you havent tried it out and bought a setup especially for that, you just wasted a ton of money.

-if you arent doing a lot of video work, a i5 is fine. i7s dont perform better in games any ways by much
-the tc12dx is generally enough. make the upgrade if you want
-cheaper ram sticks. you cant see them anyways. why bother with the overpriced dominator stuff
-you dont need a ROG board for gaming. it doesnt perform any better
-a more optimzed version of the m4
-10k rpm drives are a joke when you have a ssd
-7970s dont crossfire properly. they dump out a ton of runt frames. picked out a gtx 780...

Building it in the US with PCPartpicker as a guide to how much it costs with discounts/rebates. I don't plan on doing any heavy video editing, however I do plan on using 2-3 monitors while I game. Would you have a recommendation? It is my first build, so I guess I have gone overboard a bit!

-750w is enough for gtx 780 SLI
-you dont need windows 7 pro

If you don't plan on heavy video editing, you can take the RAM down to 8GB of low profile Corsair Vengeance at 1600mhz and drop the CPU down to an i5-3570k (or the Haswell version, the 4670k). Even if you were going to edit video, you wouldn't want that motherboard. Lot of money for not much result. The ASRock Extreme6 costs far less and will work fine. You also don't need a Velociraptor, given that you have an SSD. A normal Seagate Barracuda or WD Caviar Blue/Black would work fine.

Is there a certain problem with those listed parts? I read multiple reviews with people that were pleased with Phanteks quality and efficiency. I guess I wouldn't know about Kingwin PSU's. I figured having enough Watts while it was at a certain quality standard would be sufficient. Any recommendations?
