There is a chance that applications, in case of games, would stress your CPU when you would be running 4x card setup with SLI.

Two cards in SLI would hardly be a problem for four core CPU.

Observe that most bottlenecks mentioned on forums are happening on computers with two cores. The CPU you mention has four cores. Hence it will not bottleneck unless you play specific game that would require more cores for simultaneous engagement.

Without overclock a 965 bottlenecks CF 6850's.

With amd cpu's ( non 8320, 8350 ) you are better off with a single GPU.

Overclock to 4ghz, pair it with a single 660 ti/7870 XT.

No, not even if you overclock. I have one running 2 gtx 570s in sli. Since its a black edition you could kick it up a bit. bump it to 3.7 without increasing any voltage. It really depends on what your running. Some games are gpu boung and some are cpu bound.
