Help With Sapphire Radeon HD 6670 Resolution.

Hey guys :)
So i bought a Sapphire Radeon HD 6670 (2gb DDR3) and i got it through the mail today. I dropped it into the case fine, it powered up, automatically did it's updating business and then i hit a snag. I tried to use the HDMI output on the card and found that the Resolution for my TV had been detected correctly BUT for some reason when i applied the settings (1680x1050) a lot of my screen was cut off and i couldn't get the icons aligned on the screen correctly. I switched output to VGA and instantly everything was fine. I should also add that on the first attempt to install the drivers using AMD auto detect the program got right to the end of the driver downloads and then gave me the 'Could not parse error' message and then told me the download failed. I tried to do it again and this time it worked, almost as if the drivers had installed correctly the previous time but something had caused the program to think there was an error. Not sure if this is the problem or not but i thought mentioning it could be a good idea. Anyway, my question is this:
Is there any way i can force the resolution through the HDMI? I used EVERY tool in CCC to try and get it working but the closest i came to getting it right was having my Wallpaper fit perfectly while having my icons spread almost to the other end of the screen. Really annoying as i would love to see my games in 1080p and this card is something i've been saving for for a long while. Failing being able to force the Res, is there ANY other way i can sort it out? I use the HDMI cable for my Xbox too so that isn't it, and the VGA Resolution is flawless. Anyone got any ideas on what could be causing this? Thanks in advance :D

I'm a bit confused by parts of your question. You say your resolution is 1680x1050, then later say "I would love to see my games in 1080p" 1080p resolution is 1920x1080, therefore your screen does not come up to 1080p standard, unfortunately.
That aside, just set the resolution and then fiddle with your TV's settings via the remote control. There should be a setting that says something like "picture zoom" or something like that - see what settings are available.
For example, on my screen, I have "Auto", "Cinema", "full" etc. Any other setting other than "full" results in my desktop being cut off, similar to how you've described.

You may need to adjust the scaling. For some reason, the default scaling is 15% downsized on the HDMI out. Open the catalyst control center, on the left menu choose your monitor (it is "DTV (HDMI)" on my menu), choose scaling options, adjust slider from 15% to 0%, voila.
