How many volts/watts do I have to spare for a video cards and other add ons?

Any VGA from HD7970GE and below ( in power consumption ) should work without any problems with your setup using that XFX PSU. You have around 400w left to spare for all other components you have the desire to put on, but you shouldn't use more than 350w, and even less if your 3570k is being overclocked.
