Upgrading System (New CPU, Mobo and SSD)

So I am hoping I can get any advice on upgrading my system. Advice having to do with better deals, any problems with compatibility, etc.

Here is what I currently have:

CPU: Intel Core 2 Duo E6850 (3.0 ghz dual core)
Video Card: GTX 480
Motherboard: Asus P5E3 Deluxe
Ram: G Skill Ripjaws 2x 2gb ddr3

I intend to keep my current ram sticks, video card, case and psu but upgrade the rest of my system with these parts:

That looks like a good set-up :D
As far as I can see, there are no compatibility issues here, and it will perform well.
Obviously, the 3570k is a good choice, and will serve you well, especially if you plan to overclock it (I would assume so :p).
However, I would suggest that at some point you upgrade to 8gb of RAM, as modern games are starting to demand more RAM. Since that new motherboard has 4 RAM slots, I'd recommend that you just buy another 4gb set of the RAM you already have, hence you'd have 4 x 2gb sticks of Ripjaws. Ensure that you buy exactly the same model of RAM though, including frequency (in your case, 1333mhz).

I actually don't intend to overclock the CPU other than putting on the turbo option for it. Should I still get the custom
CPU cooler or save myself the money and just use the stock CPU cooler?

I want to mention, I have a heating problem with my GTX 480 (it recently started to go over 100c when I am gaming) and so I am looking to get lower temperature on it. I have had the card for nearly 1 year now. So I am thinking perhaps I should get a custom heatsink for it, though I haven't a clue on what would be good.

The fans in my case are all working the same and there is an air flow. It only recently started to have a heat problem since about 2 months ago. I made a guess that maybe it needs a thermal paste reapplication but that is just a guess.
