I currently have one 1080p monitor with an XFX HD6850 and just bought another 1080p monitor. I will only be using one for gaming and the other for videos and other things simultaneously. My question is will my game performance suffer a bit from the two monitor set up, and should I upgrade?

Solution
Then you'll get performance very similar to what you already get with one monitor. If you want to test exactly what it's going to be like, play a video in the background while you're gaming - that should come pretty close.
Your performance wont suffer from dual monitors, the only problem is one will be hdmi the other will be dvi which is fine. As for upgrading that is really up to your budget and power supply, if you have the money go for something from the 7000 series.

Thank you DarkSable and Gam3r01, I feel much better about sticking with my hd6850 for now... Im probably going to try to see if I can make some money off of it anyways on amazon or something cause I would like a newer gpu, but if it doesnt sell ill just stick with it, since it runs really well in most games.
