Best GPU for Three Monitors

Hi all,
I'm in the process of building a computer, and I'm at the point where I need a graphics card. At the moment, I have two 22" monitors at 1080p. However, I do plan on getting a 27" monitor which I would be running at 2560x1440, flanked by my two 22" monitors. I don't have any plans to run any games across all three screens, so that's not much of an issue.

Somebody I work with recommended find a GTX680 on eBay, which usually run for around $350. I've also thought about a GTX580; those seems to run about $200. I also have some sort of fairly old Nvidia graphics card around that I might could use for the two secondary monitors (I'll try to find it and let y'all know what it is).
I'm not necessarily against AMD, but I have heard about problems with the fog in Skyrim (on my to-play list).
Other recommendations have included the Radeon 7870 and the GTX 660 or 660Ti (what's the difference anyways?). Or, I could get a GTX 670 for possibly a little less than a 680.

SO. MANY. OPTIONS.

Any help on my best buy would be appreciated.

Edit: In case it factors into the decision, or if anybody is just curious, I'm using an Intel i7 3820 CPU.

if youre justing using the 27 inch for gaming
the only gpus powerful enough to comfortably run games at 30+ fps high res at 1440p would be
tier 1
gtx 680 or radeon 7970

tier 2 (lowest recommended
gtx 670, radeon 7950

you definately need a card with 2gb ram, preferably 3gb due to the 1440p res.

if you think you'll make use of the never settle game bundle amd radeon promotes, definately go for amd radeon
the game compatabiltiy issues should be fixed since skyrim has been out for a while.

alternatviely
you could sli or crossfire at the $400 budget if your motherboard is compatilibile
two 650ti for example.
