After installing a new 7970 I have been having lock-ups of my computer requiring a hard boot.

I have been monitoring the heat and the graphics card never seems to get above 65deg. The cpu does seem to be getting a tad hot the cores spiking around 61deg, but I don't think this is a heat issue. All of my drivers are up to date, and I am supplying plenty of power to the video card.

I had the beta drivers installed for a while, and don't recall it doing it while the beta drivers were installed, could this just be a bug with the current driver (I had different problems with the beta driver)?

First, I'd try to re-seat the card. Pull it out, and plug it back in. This could fix a short. You could have possibly burnt the card out. Does the Gigabyte version have a dual bios? If your processor has built in graphics, I'd boot the computer up, and try to flash the card.

Do you ever notice any sag in the card after it's been played a while?

It could possibly sag down and shift in the slot, causing a short. And there is always the possibility of "chip creep". Chip creep is caused when you touch the connection pins with your fingers before properly dispersing ESD. Though you may not feel anything, your body carries a charge. And a tiny tiny tiny electrical shock can occur when you touch the connectors, causing a very tiny crack in it. Over time as the card flexes and heats, that tiny tiny crack can start to spread, causing shorts and lock-ups.
