Wait, you bought a second card but then never even tried to use it? Assuming your PSU can handle it throw the second one in there, some games yield better crossfire results than others. Crossfire/SLI, setups seem to be much less trouble some now than they were a year or two ago, I've never used more than one GPU so I can't speak from experience or anything.
Skyrim is CPU bound and it will run great on any half decent card as long as the CPU is up to the task. In short you absolutely do not need CF/SLI to run Skyrim to it's full potential . All that's needed is a decent single GPU GTX 460 / HD 6850 or better backed up with a good CPU.

just make sure you have at least 2x 8x pcie slots, 4x slots will increase frame latency between cards causing more stuttering. run with vsync or frame limiter on to avoid stuttering, make sure you have a crossfire bridge too.
