The rule for a well balanced gaming computer is to spend twice as much on the graphics card as on the CPU.

Skyrim is one of the few games that is very CPU bound. It still needs a good graphics card though especially with the high res mods. Anyway you can get the system and use onboard graphics for a month or two and save some more money for a HD 7950/7970 or GTX 760/770?

the 7870xt is just 5~10 bucks more and performs on almost the same league as the 7950 even the 670. i'd stick with intel's i5 on this one as it performs better on skyrim than the 8350. otherwise its all good.
-edit-
and don't get the "k" series if you aren't going to oc. no reason to spend more if you're not going to use the feature you are buying it for anyways.

^ I agree with this. Get a non K CPU unless you plan on overclocking. And the 7870XT is a good choice.
