In minecraft, on the lower settings, I'm only getting about 50FPS minimum and 80FPS maximum. I need to keep my frames at 60FPS, but even with lower graphics, I keep dropping below that. I'm playing fullscreen in a 1080p monitor. Before, I was using a 1440x900 monitor and I was getting about 200-300FPS no problem. Why such a huge frame drop?

Because minecraft's graphics are so hardware demanding, you need quad SLI Titans to run it. 1080 uses a hell of lot more pixels for your card to push is the answer, even though the pixels in that game make my eyes bleed.
1440x900 = 1,296,000
1080x1920 = 2,073,600

in short your original res was 60% the number of pixels... check your gpu load numbers... see if it's hitting 100% utilization. if it is, it's bottlenecking you. If its not, and your cpu is hitting high single or two core utilization you know it's your cpu bottlenecking you.
