Which of These Builds Is Better?

Hello,
So I am going to be building my PC in a few weeks and I was always going to go with Intel. But just for the fun of it, I made the equivalent of my Intel build, to AMD based. What I plan to use this PC for is Gaming, Heavy Video Editing, Heavy Multitasking, Recording (Using Xsplit), Internet, Everyday Use, and School (Microsoft Office mainly).

Here are my two builds:

Intel:

Here are my questions:

1) Which one is better, in terms of performance in the tasks I stated above?
2) Is my PSU overkill on the AMD side? If it is, I'd like to stick with Corsair PSU's.
3) Is there anything I should be aware of, that I don't know?

A few last things I do want to mention:

1) I know I could go with a 840 Pro, but I want to conserve money, and I'm not that fused with it.
2) The reason why I went with 2 x 1TB HDD's is because I want one strictly for Editing, the other for other things.

If anyone could answer those questions, that would be awesome!

Unless you plan to SLI in the future both PSU's are way overpowered.

What Corsair PSU would be good? I am strongly with Corsair. I would like it Modular too.

Also, I am going to be OC'ing my Intel build probably to 4.3 or 4.4GHz.
