Well I have two answer for you.

1) Better for performance: The 560 Ti SLI is better because you have two cores with divide load processing the game, photo edition or similar, in that way, each GPU only have to be worried about part of the process and not all of it.

2) Better for me: GTX 680 because in SLI one of your GPUs runs more hotter than the other one (at least that you run liquid cooling, maybe). Power, as you said it's not an issue for you, but while you run a 560 Ti SLI with a 750W PSU, I run a GTX 680 Lightning with a 650W PSU that I'm pretty sure that overclocked can do the same as your 560 Ti SLI.

A single 660Ti will give comparable performance to SLi'd 560Ti's.

In the todays worl, with CPUs and GPUs released almost each year you will see that a GTX 680 will be almost "decent" in those two years. Yeah, you can SLI in future, but maybe found out a GTX 680 at that time, of the same reference that you get now, would cost similar or more that a new generation GPU.

I have been looking on ebay gtx 560 ti price and they are between 80-120 $ (depend) and if I overclock them they will get better than a gtx 670 Or I buy a gtx 670 and overclock it to be same as a gtx 680 or I wait to buy a gtx 680 ....but before i need to change my cpu cooler and my motherboard because can't oc and after temps will get high :(  I really don't know what to do. The gtx 560 will be quiker to get compare to a gtx 680 because i make my self 5$ a week (for chores) and when I keep little kids 15-25$.

At launch, two 560Ti's were about equivalent with a 580.
At launch, a 680 smashed a 580.
Therefore 680 is better. Also you dont run into SLI issues like framerating, higher thermal output and power consumption, game/driver glitches and the like.

However a 670 is just a lower clocked 680 and costs a ton less, go for a 670.
