Would the AMD FX-6300 3.5GHz 6-Core Processor and the SAPPHIRE Vapor-X 100351VXSR Radeon HD 7970 GHz Edition 3GB 384-bit GDDR5 PCI Express 3.0 x16 HDCP Ready CrossFireX Support Video Card work well together? With these too would you say I could play any game maxed out?

If this is not your current build, I would suggest the fx 6350 and gtx 770. Some mild bottlenecking could occur, but it would likely be alleviated by a good ole overclock.

The GTX 770 is a better option unless you want all the free games with the 7970. Without an overclock the 6300 will not quite keep up with the 7970 or 770 but with it is good. That assumes a resolution of 1920x1080. Note the GTX 760 & Radeon 7950 offer better value than the 7970/770 but if you can afford them the 770/7970 are better.
2nd question you can max all games with the CPU & 770/7970 but cannot expect a solid 60FPs (but can in most) in all games or activate ubersampling on witcher 2. this again assumes res. 1920x1080.

They will work fine. "Bottleneck" sure. Significant? No. Overclock as desired but really and truly don't worry about it. GTX 770 is a my choice of card right now if you'd be paying the same price as a 7970. If you need the games, 7970 no brainer. If you can pick up the cheap Sapphire 7970, no brainer. Good Luck.
