windows home server is great for doing what you mentioned and runs ontop of a 2008 base but is very user friendly. Its also very cheap.

Linux will do just about anything in existence if youre willing to put in the time and effort.

server 2012/2008 will also do just about anything in existence but in a fairly user friendly package. Youll end up paying for it tho.

Remote access is built into pretty much every OS server or not. You'll need a dedicated ip or something like no-ip however for remote access outside your home.

If you go the Linux/2012/2008 route I suggest serviio for media steaming. WHS11 has fairly well done media streaming already built into it.

If youre running a real server os freenas is pointless because file sharing is a native function of servers. Nas software is typically just a very dumbed down and specific server os.

Depends on what you mean. If you're planning on buying two servers that kinda pointless because there are few circumstances where at home youd want two physical machines over a single more powerful one.

If you already have two boxes. Well id split up the functions between them. Lets say use the weaker machine as networked storage with the more powerful machine as streaming/remote access and have it map back to the second machines networked storage.

I built a computer a while back and I got windows 7 home premium on it, I partitioned it and gave the partition 100gb of space. But what I'm planning on doing is putting ubuntu server OS on the partition by uploading the system.
